Vegan Mango Cheesecake Bars

A delicious, dairy-free alternative to traditional cheesecake, these Vegan Mango Cheesecake Bars are rich and creamy, showcasing the tropical flavor of mango.

  • 2 cups cashews, soaked
  • 1 cup mango puree
  • 1/2 cup coconut cream
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup melted coconut oil
  • 1 cup almond flour
  • 2 tablespoons coconut sugar
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Blend cashews, mango puree, coconut cream, maple syrup, vanilla extract, and coconut oil until smooth.
  3. Mix almond flour, coconut sugar, and salt in a bowl. Press into a lined baking pan.
  4. Pour the mango mixture over the crust and spread evenly.
  5. Bake for 25 minutes. Allow to cool before refrigerating for at least 2 hours.
  6. Cut into bars and serve chilled.
