Thai Mango Sweet Sticky Rice

A classic Thai dessert that combines the sweetness of mango with creamy coconut sticky rice.

  • 1 cup glutinous rice
  • 1 cup coconut milk
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 2 ripe mangoes
  • 1 tsp sesame seeds (optional)

Instructions

  1. Rinse the glutinous rice under cold water until the water runs clear.
  2. Soak the rice in water for at least 3 hours or overnight.
  3. Steam the soaked rice for about 20-25 minutes until cooked.
  4. In a pot, heat the coconut milk, sugar, and salt until the sugar dissolves.
  5. Once the rice is cooked, mix in most of the coconut milk mixture (reserve some for serving).
  6. Let the rice sit covered for about 30 minutes to absorb the flavors.
  7. Slice the mangoes and serve over the sticky rice, drizzling with the reserved coconut milk.
  8. Sprinkle with sesame seeds if desired.

Notes

  • For best flavor, use ripe mangoes.
  • Adjust the sweetness of the coconut milk according to your preference.
