- 1 pound chicken breast, sliced
- 2 cups mixed vegetables (bell peppers, broccoli, carrots)
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 tablespoons rice vinegar
- 2 tablespoons sesame oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1 tablespoon cornstarch
- 2 tablespoons water
- 2 cups cooked rice, for serving
- In a bowl, mix the soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger.
- Add the sliced chicken to the marinade and let it sit for 15 minutes.
- In a large pan, heat some oil over medium-high heat and stir fry the vegetables until tender.
- Remove the vegetables and set aside. In the same pan, add the marinated chicken and cook until browned and cooked through.
- Mix the cornstarch with water and add to the pan to thicken the sauce.
- Add the vegetables back into the pan and stir to combine.
- Serve over cooked rice.

- For extra flavor, let the chicken marinate longer if time allows.
