Teriyaki Chicken Stir Fry

This Teriyaki Chicken Stir Fry is an easy and juicy recipe that you can whip up for dinner any night of the week!

Ingredients

  • 1 pound chicken breast, sliced
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 cups cooked rice, for serving

Instructions

  1. In a bowl, mix the soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger.
  2. Add the sliced chicken to the marinade and let it sit for 15 minutes.
  3. In a large pan, heat some oil over medium-high heat and stir fry the vegetables until tender.
  4. Remove the vegetables and set aside. In the same pan, add the marinated chicken and cook until browned and cooked through.
  5. Mix the cornstarch with water and add to the pan to thicken the sauce.
  6. Add the vegetables back into the pan and stir to combine.
  7. Serve over cooked rice.

Notes

  • For extra flavor, let the chicken marinate longer if time allows.
  • You can use any vegetables you have on hand.
