A delightful twist on two classic desserts, this Strawberry Shortcake Cheesecake combines the richness of cheesecake with the lightness of shortcake.

  • 1 package of digestive biscuits
  • 1/4 cup butter, melted
  • 16 ounces cream cheese
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup fresh strawberries, sliced
  • 1 cup heavy cream
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix the crushed digestive biscuits with melted butter until well combined.
  3. Press the mixture into the bottom of a springform pan to form a crust.
  4. In a large mixing bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth.
  5. Add the eggs one at a time, beating well after each addition.
  6. Pour the cheesecake batter over the crust and smooth the top.
  7. Bake in the preheated oven for about 50 minutes or until set.
  8. Let cool completely before refrigeration for at least 4 hours.
  9. Whip the heavy cream with sugar and vanilla extract until stiff peaks form.
  10. Top the chilled cheesecake with whipped cream and fresh strawberries before serving.
