Spicy Butternut Squash and Sweet Potato Soup

Ingredients

  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • salt to taste
  • pepper to taste
  • optional red pepper flakes for garnish

Instructions

  1. Peel and cube the butternut squash and sweet potatoes.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the chopped onion and garlic; sauté until translucent.
  4. Stir in the cumin, paprika, and chili powder.
  5. Add the cubed squash and sweet potatoes to the pot.
  6. Pour in the vegetable broth and bring to a boil.
  7. Reduce heat and simmer until vegetables are tender, about 20 minutes.
  8. Blend the soup until smooth, then stir in the coconut milk.
  9. Season with salt and pepper.
  10. Serve hot, garnished with red pepper flakes if desired.
