Red Wine Braised Beef

A hearty and flavorful dish perfect for cozy evenings.

Ingredients

  • 3 pounds beef chuck roast
  • 1 bottle red wine
  • 2 cups beef broth
  • 1 tablespoon olive oil
  • 2 onions, chopped
  • 4 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 2 bay leaves
  • 1 tablespoon fresh thyme
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Season the beef with salt and pepper, then sear it on all sides in a large Dutch oven with olive oil.
  3. Remove the beef and add onions, garlic, carrots, and celery to the pot. Sauté until softened.
  4. Pour in the red wine, scraping up any browned bits from the bottom of the pot.
  5. Add the beef back to the pot along with beef broth, bay leaves, and thyme.
  6. Bring to a simmer, then cover and transfer to the oven.
  7. Braise for about 3 hours, or until the beef is tender.
  8. Remove the bay leaves and serve.

  • Letting the beef rest after cooking enhances its juiciness.
  • Serve with mashed potatoes or crusty bread.
