  • 1 1/2 cups crushed graham crackers
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 cups cream cheese, softened
  • 1 cup sour cream
  • 1 tablespoon vanilla extract
  • 1 cup chopped pistachios

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix crushed graham crackers and melted butter; press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth.
  4. Add eggs, one at a time, mixing well after each addition.
  5. Stir in sour cream and vanilla extract.
  6. Fold in chopped pistachios.
  7. Pour the mixture over the crust and bake for 60 minutes.
  8. Let it cool and refrigerate for at least 4 hours before serving.
