  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • 1 cup cannellini beans
  • 1 cup diced tomatoes
  • 4 cups vegetable broth
  • 1 cup small pasta (such as ditalini)
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop.
  2. In the same pot, sauté onion, carrots, and celery until soft.
  3. Add garlic, oregano, and basil, cooking until fragrant.
  4. Stir in tomatoes, beans, and broth. Bring to a boil.
  5. Add pasta and bacon back into the pot; cook until pasta is tender.
