- 1 cup arborio rice
- 4 cups chicken broth
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tablespoon soy sauce
- 1 tablespoon sake
- 1/2 cup grated parmesan cheese
- 1 salmon fillet
- 2 tablespoons butter
- Salt and pepper to taste
- In a pot, heat chicken broth and keep warm on low heat.
- In a separate pan, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
- Add arborio rice to the pan, stirring until well-coated with oil.
- Pour in sake and soy sauce, and stir until absorbed.
- Add warm chicken broth one ladle at a time, stirring continuously until absorbed before adding more.
- Once the rice is creamy and cooked al dente, stir in parmesan cheese and butter. Season with salt and pepper.
- In another pan, sear the salmon fillet until golden and cooked to your liking, then slice.
- Serve the risotto topped with the seared salmon.
Notes
- For extra flavor, add chopped green onions on top before serving.
- Make sure to stir the risotto continuously for the best texture.
