Hearty Cheddar Garlic Herb Potato Soup

  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup shredded Cheddar cheese
  • 1 cup heavy cream
  • 4 slices turkey bacon, cooked and crumbled
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, sauté onions and garlic until translucent.
  2. Add the diced potatoes and chicken broth. Bring to a boil.
  3. Reduce heat and simmer until potatoes are tender.
  4. Use a potato masher to partially mash the potatoes for a thicker texture.
  5. Stir in the heavy cream, shredded Cheddar cheese, thyme, salt, and pepper.
  6. Cook until the cheese is melted and soup is heated through.
