  • 2 large onions, thinly sliced
  • 4 slices turkey bacon, chopped
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 1 teaspoon thyme
  • 1 tablespoon flour
  • 4 slices baguette
  • 1 cup grated Swiss cheese

Instructions

  1. In a large pot, heat butter and olive oil over medium heat.
  2. Add chopped turkey bacon and cook until crispy.
  3. Stir in the onions and sugar; cook until caramelized.
  4. Sprinkle flour over the mixture and stir to combine.
  5. Slowly add beef broth and thyme, bringing to a simmer.
  6. Toast baguette slices and place on top of soup.
  7. Sprinkle Swiss cheese over the bread and broil until bubbly.

Notes

  • For a vegetarian version, omit turkey bacon and use vegetable broth.
