Feta Cheese Stuffed Zucchini

  • 4 medium zucchini
  • 1 cup crumbled feta cheese
  • 1/2 cup cooked quinoa
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchini in half lengthwise and scoop out the flesh.
  3. In a skillet, heat olive oil over medium heat and sauté onions and garlic until translucent.
  4. Mix in the quinoa, feta cheese, oregano, and pepper.
  5. Stuff the zucchini halves with the mixture.
