Easy Carrot Cake Cupcakes

  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots
  • 1 cup crushed pineapple, drained
  • ½ cup chopped walnuts (optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. In a medium bowl, mix together the flour, baking soda, baking powder, salt, and cinnamon.
  3. In a large bowl, combine the granulated sugar, brown sugar, and oil. Mix until well combined.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the grated carrots, crushed pineapple, walnuts, and vanilla extract.
  6. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  7. Pour the batter into the prepared cupcake liners, filling each about 2/3 full.
  8. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the cupcakes cool completely before frosting.

Notes

  • For added flavor, consider adding raisins or coconut to the batter.
