- 1 pound gnocchi
- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 1 cup heavy cream
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup Parmesan cheese, grated
- Cook the gnocchi according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the garlic and mushrooms, sauté until the mushrooms are tender.
- Add the spinach and cook until wilted.
- Pour in the heavy cream, and bring to a simmer. Stir in the cooked gnocchi.
- Season with salt and pepper, then stir in the Parmesan cheese. Cook for an additional 2-3 minutes until heated through.
