Creamy Spinach and Mushroom Gnocchi

Ingredients

  • 1 pound gnocchi
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup Parmesan cheese, grated

Instructions

  1. Cook the gnocchi according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the garlic and mushrooms, sauté until the mushrooms are tender.
  3. Add the spinach and cook until wilted.
  4. Pour in the heavy cream, and bring to a simmer. Stir in the cooked gnocchi.
  5. Season with salt and pepper, then stir in the Parmesan cheese. Cook for an additional 2-3 minutes until heated through.

Notes

  • For a lighter version, substitute the heavy cream with half-and-half.
  • Add grilled chicken for extra protein.
