Cowboy Butter Chicken Linguine

  • 1 pound chicken thighs, boneless and skinless
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Cook the linguine according to package instructions. Drain and set aside.
  2. In a large skillet, melt the butter over medium heat.
  3. Add the minced garlic and sauté until fragrant, about 1 minute.
  4. Add the chicken thighs to the skillet, season with paprika, thyme, oregano, salt, and pepper, and cook until browned and cooked through, about 6-7 minutes per side.
  5. Remove the chicken from the skillet and let rest for a few minutes, then slice.
  6. Add the cooked linguine to the skillet, tossing to coat in the garlic butter. Stir in the chopped parsley.
  7. Serve the pasta topped with the sliced chicken.

  • For a spicy kick, add red pepper flakes to the chicken while cooking.
