  • 1 cup jasmine rice
  • 14 ounces coconut milk
  • 2 cups chicken broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon soy sauce
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lime, juiced

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the garlic and ginger; cook for another minute.
  4. Add the chicken thighs, cooking until browned on all sides.
  5. Pour in the coconut milk and chicken broth, then add the soy sauce, salt, and pepper.
  6. Bring to a simmer, then stir in the jasmine rice.
  7. Cover and cook for about 20 minutes, or until the rice is tender.
  8. Remove from heat, squeeze lime juice over the top and serve hot.
