Classic Eggplant Parmesan

  • 2 large eggplants
  • 3 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup grated parmesan cheese
  • 1 cup breadcrumbs
  • 1/4 cup olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplants into 1/4 inch rounds and sprinkle with salt. Let sit for 30 minutes to draw out moisture.
  3. Rinse the eggplant slices and pat dry with paper towels.
  4. In a large skillet, heat olive oil over medium heat. Fry the eggplant slices in batches until golden brown on both sides.
  5. In a baking dish, layer some marinara sauce, a layer of fried eggplant, mozzarella cheese, and parmesan. Repeat layers, finishing with mozzarella on top.
  6. Sprinkle breadcrumbs over the top.
  7. Bake for 30-35 minutes until the cheese is bubbly and golden brown.
  8. Let it cool for a few minutes before serving.

Notes

  • For extra flavor, add fresh basil on top before serving.
  • Can be made ahead and reheated in the oven.
