- 2 large eggplants
- 3 cups marinara sauce
- 2 cups shredded mozzarella cheese
- 1 cup grated parmesan cheese
- 1 cup breadcrumbs
- 1/4 cup olive oil
- 1 tablespoon salt
- 1 teaspoon black pepper
- 2 teaspoons dried basil
- 2 teaspoons dried oregano
- Preheat the oven to 375°F (190°C).
- Slice the eggplants into 1/4 inch rounds and sprinkle with salt. Let sit for 30 minutes to draw out moisture.
- Rinse the eggplant slices and pat dry with paper towels.
- In a large skillet, heat olive oil over medium heat. Fry the eggplant slices in batches until golden brown on both sides.
- In a baking dish, layer some marinara sauce, a layer of fried eggplant, mozzarella cheese, and parmesan. Repeat layers, finishing with mozzarella on top.
- Sprinkle breadcrumbs over the top.
- Bake for 30-35 minutes until the cheese is bubbly and golden brown.
- Let it cool for a few minutes before serving.
