  • 1 cup sugar
  • 1 cup brown sugar
  • 1 cup butter, softened
  • 2 eggs
  • 3 1/2 cups all-purpose flour
  • 2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1/2 tsp salt
  • 1/4 cup sugar (for rolling)
  • 1 tbsp cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, sugar, and brown sugar until smooth.
  3. Mix in the pumpkin puree and eggs until well combined.
  4. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.
  5. Gradually blend the dry ingredients into the wet mixture until just combined.
  6. In a small bowl, mix the sugar and cinnamon for rolling.
  7. Roll the dough into balls, then roll each ball in the cinnamon sugar.
  8. Place the dough balls on a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes, or until the edges are golden.
  10. Remove from oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • For chewier cookies, do not overbake.
  • Adjust spices according to your taste.
