Cashew Cream Cajun Chicken Pasta

Ingredients

  • 1 cup cashews
  • 8 ounces linguine or pasta of choice
  • 2 tablespoons olive oil
  • 1 pound chicken breast, sliced
  • 1 tablespoon Cajun seasoning
  • 4 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, fresh
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Soak cashews in water for at least 2 hours, then drain and blend with a little water until smooth.
  2. Cook pasta according to package instructions. Drain and set aside.
  3. In a large pan, heat olive oil over medium heat. Add chicken and Cajun seasoning, cooking until chicken is browned and cooked through.
  4. Add garlic and sauté for 1 minute.
  5. Pour in the vegetable broth and bring to a simmer.
  6. Add halved cherry tomatoes and fresh spinach. Cook until spinach wilts.
  7. Stir in the cashew cream and cooked pasta, mixing until everything is well combined.
  8. Season with salt and pepper to taste, then serve warm.

  • For a vegan option, replace chicken with tofu or additional vegetables.
  • Adjust the amount of Cajun seasoning to your heat preference.
