  • 2 pounds beef chuck roast
  • 1 onion, chopped
  • 4 cloves of garlic, minced
  • 3 dried guajillo chiles
  • 1 tablespoon of apple cider vinegar
  • 2 teaspoons of paprika
  • 1 teaspoon of cumin
  • 1 teaspoon of dried oregano
  • 4 corn tortillas
  • 1 cup of shredded cheese
  • 1 cup of chopped cilantro

Instructions

  1. In a large pot, brown the beef chuck roast over medium heat.
  2. Add chopped onion, garlic, and dried guajillo chiles to the pot.
  3. Pour in apple cider vinegar and add the spices; stir well.
  4. Add water to cover all the ingredients and simmer for 2 hours or until the beef is tender.
  5. Shred the beef and mix it back into the broth.
  6. Warm the tortillas and fill them with beef, cheese, and cilantro.
  7. Serve with broth for dipping.

Notes

  • For a spicy kick, add jalapeños to the filling.
