  • 4 cups beef broth
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the beef on all sides.
  2. Add onions and garlic, sauté until softened.
  3. Stir in tomato paste, then add broth, carrots, potatoes, thyme, and bay leaf.
  4. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
  5. Season with salt and pepper before serving.
