- 2 ripe bananas
- 1 cup rolled oats
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup nuts or chocolate chips (optional)
- Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Add rolled oats, almond butter, honey, vanilla extract, baking powder, cinnamon, and salt to the bowl. Mix until well combined.
- If using, fold in nuts or chocolate chips.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Bake for 25-30 minutes or until golden brown. Allow to cool before cutting into bars.
