Ingredients

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup nuts or chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Add rolled oats, almond butter, honey, vanilla extract, baking powder, cinnamon, and salt to the bowl. Mix until well combined.
  4. If using, fold in nuts or chocolate chips.
  5. Pour the mixture into the prepared baking dish and spread it evenly.
  6. Bake for 25-30 minutes or until golden brown. Allow to cool before cutting into bars.
