Zucchini & Sweet Potato Fritters

These Zucchini & Sweet Potato Fritters are a deliciously nutritious way to enjoy vegetables. Easy to prepare and perfect for any meal!

Ingredients

  • 2 medium zucchinis
  • 1 medium sweet potato
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 3 tablespoons chopped fresh parsley
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Grate the zucchinis and sweet potato using a box grater. Squeeze out excess moisture.
  2. In a large bowl, combine the grated zucchini and sweet potato with the flour, eggs, salt, pepper, garlic powder, onion powder, parsley, and Parmesan cheese.
  3. Heat a non-stick skillet over medium heat and add oil.
  4. Drop spoonfuls of the mixture onto the skillet, flattening them slightly.
  5. Cook for 3-4 minutes on each side or until golden brown.
  6. Drain on paper towels and serve warm.

Notes

  • For added flavor, substitute feta cheese for Parmesan.
  • Serve with a yogurt sauce for dipping.
