2 medium zucchinis
1 medium sweet potato
1 cup all-purpose flour
2 large eggs
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
3 tablespoons chopped fresh parsley
1/4 cup grated Parmesan cheese
Instructions
Grate the zucchinis and sweet potato using a box grater. Squeeze out excess moisture.
In a large bowl, combine the grated zucchini and sweet potato with the flour, eggs, salt, pepper, garlic powder, onion powder, parsley, and Parmesan cheese.
Heat a non-stick skillet over medium heat and add oil.
Drop spoonfuls of the mixture onto the skillet, flattening them slightly.
Cook for 3-4 minutes on each side or until golden brown.
Drain on paper towels and serve warm.
Notes
For added flavor, substitute feta cheese for Parmesan.
