3 ripe bananas
1/2 cup honey or maple syrup
1/4 cup coconut oil, melted
2 eggs
1 teaspoon vanilla extract
1 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup walnuts, chopped (optional)
Instructions
Preheat your oven to 350°F (175°C) and grease a loaf pan.
In a large bowl, mash the bananas until smooth.
Add honey (or maple syrup), melted coconut oil, eggs, and vanilla extract, and mix until combined.
In another bowl, whisk together the whole wheat flour, baking soda, cinnamon, and salt.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Fold in the chopped walnuts if using.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For added crunch, sprinkle some cinnamon sugar on top before baking.
