White Chicken Chili: Easy Comfort Food with Turkey Bacon Twist

White Chicken Chili

A delicious twist on classic chili, featuring tender white chicken and crispy turkey bacon for a comforting meal.

  • 1 pound boneless, skinless chicken breasts
  • 4 slices turkey bacon
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup sour cream
  • 1/4 cup cilantro, chopped

Instructions

  1. In a large pot, cook turkey bacon over medium heat until crispy. Remove and chop.
  2. In the same pot, sauté onion and garlic until translucent.
  3. Add chicken breasts, broth, beans, corn, cumin, chili powder, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for 20-25 minutes, until chicken is cooked through.
  5. Remove chicken, shred it, then stir back into the pot along with sour cream and cilantro.
  6. Serve hot, garnished with extra cilantro if desired.

Notes

  • For a spicier version, add diced jalapeños.
  • Can be made ahead and reheated for meal prep.
