- 1 pound boneless, skinless chicken breasts
- 4 slices turkey bacon
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup sour cream
- 1/4 cup cilantro, chopped
- In a large pot, cook turkey bacon over medium heat until crispy. Remove and chop.
- In the same pot, sauté onion and garlic until translucent.
- Add chicken breasts, broth, beans, corn, cumin, chili powder, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 20-25 minutes, until chicken is cooked through.
- Remove chicken, shred it, then stir back into the pot along with sour cream and cilantro.
- Serve hot, garnished with extra cilantro if desired.
Notes
- For a spicier version, add diced jalapeños.
- Can be made ahead and reheated for meal prep.
