Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 2 cups kale, chopped
  • 1 bay leaf
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the onion, carrots, and celery. Cook until the vegetables are tender.
  3. Add garlic and cook for another minute.
  4. Stir in the barley, vegetable broth, tomatoes, bay leaf, and thyme.
  5. Bring to a boil, then reduce heat and simmer for 30-40 minutes until barley is tender.
  6. Add kale and cook for an additional 5 minutes.
  7. Season with salt and pepper to taste before serving.
