- 1 cup barley
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 3 carrots, diced
- 3 celery stalks, diced
- 1 large zucchini, diced
- 6 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups kale, chopped
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until translucent.
- Add the carrots and celery, cooking for another 5 minutes.
- Stir in the zucchini, barley, vegetable broth, thyme, oregano, salt, and pepper. Bring to a boil.
- Reduce heat to low and simmer for 30-40 minutes or until the barley is tender.
- Stir in the kale and cook for an additional 5 minutes.
- Adjust seasoning if necessary and serve warm.
