Vegetable Barley Soup

A comforting and nutritious vegetable barley soup perfect for any homemade meal.

Ingredients

  • 1 cup barley
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, diced
  • 3 celery stalks, diced
  • 1 large zucchini, diced
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups kale, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until translucent.
  2. Add the carrots and celery, cooking for another 5 minutes.
  3. Stir in the zucchini, barley, vegetable broth, thyme, oregano, salt, and pepper. Bring to a boil.
  4. Reduce heat to low and simmer for 30-40 minutes or until the barley is tender.
  5. Stir in the kale and cook for an additional 5 minutes.
  6. Adjust seasoning if necessary and serve warm.

Notes

  • For added flavor, consider adding a splash of lemon juice before serving.
