  • 4 cups vegetable broth
  • 2 cups mushrooms, sliced
  • 1 onion, diced
  • 2 carrots, diced
  • 3 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 cups kale, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, carrots, and celery, sautéing until softened.
  3. Stir in garlic and mushrooms, cooking until the mushrooms are browned.
  4. Add vegetable broth, pearl barley, thyme, and black pepper. Bring to a boil.
  5. Reduce heat and simmer for 30-40 minutes, or until barley is tender.
  6. Stir in kale and cook for an additional 5 minutes.
