Turkish Eggs with Creamy Yogurt & Butter Sauce Recipe

  • 4 large eggs
  • 1 cup plain yogurt
  • 2 tablespoons unsalted butter
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • Salt to taste
  • Fresh dill for garnish

Instructions

  1. Bring a pot of water to a gentle simmer and carefully add the eggs. Cook for about 6 minutes for soft-boiled eggs.
  2. While the eggs are cooking, prepare the yogurt mixture by whisking the yogurt with a pinch of salt in a bowl.
  3. For the butter sauce, heat the butter and olive oil in a small pan, add paprika, and stir until fragrant.
  4. Once the eggs are done, remove them from the boiling water and let them cool briefly before peeling.
  5. To serve, spread a layer of the yogurt on a plate, place the peeled eggs on top, and drizzle with the spiced butter sauce. Garnish with fresh dill.

Notes

  • For a creamier yogurt, you can strain it through a cheesecloth for a few hours before using.
