Thick & Hearty Minestrone Soup with Turkey Bacon and Chicken Ham

- 1 tablespoon olive oil
- 4 slices turkey bacon
- 1 cup diced chicken ham
- 1 onion, chopped
- 2 carrots, diced
- 2 stalks celery, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 cup green beans, chopped
- 1 cup zucchini, diced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup pasta (small shaped)
- Parmesan cheese for serving
- In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crisp. Remove and chop.
- Add chicken ham, onion, carrots, and celery to the pot; sauté until vegetables are tender.
- Stir in garlic and cook for an additional minute.
- Add tomatoes, chicken broth, beans, green beans, and zucchini. Season with oregano, basil, salt, and pepper.
- Bring to a boil, then reduce to a simmer for 20 minutes.
- Add pasta and cook until al dente.
- Serve hot, topped with chopped turkey bacon and Parmesan cheese.
Notes
- For added flavor, try using homemade broth.
- Refrigerate leftovers in an airtight container.
