Thick & Hearty Minestrone Soup

A delicious and hearty minestrone soup featuring turkey bacon for a comforting twist.

Ingredients

  • 6 slices turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, diced
  • 2 stalks celery, diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup pasta (small shape, e.g. elbow)
  • 2 cups spinach, chopped
  • 1 tablespoon Italian seasoning
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add onions, garlic, carrots, and celery. Sauté until softened.
  3. Add the diced tomatoes and vegetable broth to the pot. Bring to a boil.
  4. Add the kidney beans and pasta. Cook according to pasta package instructions.
  5. Stir in the spinach and Italian seasoning. Cook until spinach wilts.
  6. Crumble the turkey bacon and add it back to the pot. Season with salt and pepper to taste.

Notes

  • For extra flavor, you can add a sprinkle of parmesan cheese before serving.
  • This soup can be made vegetarian by omitting the turkey bacon.
