Thai Red Curry Ground Beef with Peanut Sauce

  • 1 can coconut milk
  • 2 tablespoons Thai red curry paste
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, grated
  • 2 cups cooked rice, for serving

Instructions

  1. In a large skillet, cook the ground beef over medium heat until browned.
  2. Drain excess fat and add garlic and ginger, cooking for another minute.
  3. Stir in the Thai red curry paste and cook for 2 minutes.
  4. Add the coconut milk, peanut butter, soy sauce, and lime juice; stir and simmer for 10 minutes.
  5. Serve over cooked rice.
