Tangy Rainbow Slaw

  • 2 cups green cabbage, shredded
  • 1 cup red cabbage, shredded
  • 1 cup carrots, grated
  • 1 cup bell peppers, sliced
  • 1/2 cup green onions, chopped
  • 1/4 cup apple cider vinegar
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cabbages, carrots, bell peppers, and green onions.
  2. In a separate small bowl, whisk together the apple cider vinegar, olive oil, honey, Dijon mustard, salt, and pepper.
  3. Pour the dressing over the slaw and toss to combine.
  4. Let it sit for at least 20 minutes before serving to allow flavors to meld.
