Tangy Potato-Green Bean Salad

A refreshing and flavorful salad made with tender potatoes, crisp green beans, and savory turkey bacon, perfect for any occasion.

Ingredients

  • 2 cups green beans, trimmed
  • 3 cups potatoes, diced
  • 4 strips turkey bacon, cooked and crumbled
  • 1/4 cup red onion, chopped
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Boil potatoes in salted water until tender, about 15 minutes. Drain and cool.
  2. Blanch green beans in boiling water for 3-4 minutes, then transfer to ice water to stop cooking.
  3. In a large bowl, mix olive oil, apple cider vinegar, Dijon mustard, salt and pepper.
  4. Add cooled potatoes, green beans, red onion, and turkey bacon to the bowl. Toss gently to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • This salad is best served chilled.
  • Feel free to add other vegetables or herbs based on your preference.
