- 2 cups green beans, trimmed
- 3 cups potatoes, diced
- 4 strips turkey bacon, cooked and crumbled
- 1/4 cup red onion, chopped
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- Boil potatoes in salted water until tender, about 15 minutes. Drain and cool.
- Blanch green beans in boiling water for 3-4 minutes, then transfer to ice water to stop cooking.
- In a large bowl, mix olive oil, apple cider vinegar, Dijon mustard, salt and pepper.
- Add cooled potatoes, green beans, red onion, and turkey bacon to the bowl. Toss gently to combine.
- Chill in the refrigerator for at least 30 minutes before serving.

- This salad is best served chilled.
