  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 ripe mango, sliced
  • 2 tablespoons spicy mayo
  • 1 tablespoon sesame seeds
  • 2 sheets nori, cut in half
  • 1 cup crispy puffed rice

Instructions

  1. Cook sushi rice according to package instructions.
  2. In a bowl, mix rice vinegar, sugar, and salt until dissolved. Stir this mixture into the cooked rice.
  3. On a bamboo mat, place a sheet of nori and spread a thin layer of sushi rice evenly over the nori.
  4. Layer mango slices and a drizzle of spicy mayo on top of the rice.
  5. Carefully roll the sushi using the bamboo mat, applying gentle pressure.
  6. Sprinkle crispy puffed rice on the outside of the roll for texture.
  7. Slice the sushi roll into bite-sized pieces and serve with extra spicy mayo and sesame seeds on top.
