Sweet & Tangy Chicken Adobo with Coconut Pineapple Rice

  • 2 pounds chicken thighs
  • 1/4 cup soy sauce
  • 1/4 cup vinegar
  • 1/4 cup coconut milk
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1 bay leaf
  • 1 tablespoon brown sugar
  • 1 teaspoon black pepper
  • 1 cup jasmine rice
  • 1 cup pineapple, diced
  • 1 cup coconut water

Instructions

  1. Marinate the chicken thighs in soy sauce, vinegar, and garlic for at least 30 minutes.
  2. In a pot, heat oil and sauté onions until translucent.
  3. Add chicken to the pot and cook until browned.
  4. Add bay leaf, brown sugar, and black pepper; pour in coconut milk and simmer for 30 minutes.
  5. In another pot, combine jasmine rice, diced pineapple, and coconut water; cook until rice is fluffy.
  6. Serve chicken adobo over coconut pineapple rice.

Notes

  • For a spicier kick, add sliced chili peppers while marinating the chicken.
