Sweet Potato Oats Porridge

A warm and nourishing breakfast option, perfect for chilly mornings.

Ingredients

  • 1 cup rolled oats
  • 1 medium sweet potato, peeled and diced
  • 2 cups milk or dairy-free alternative
  • 1 tablespoon maple syrup
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 pinch salt
  • 1 tablespoon chopped nuts (optional)

Instructions

  1. In a pot, combine the diced sweet potato and milk. Cook over medium heat until the sweet potato is tender, about 10 minutes.
  2. Add rolled oats, maple syrup, cinnamon, nutmeg, and salt to the pot. Stir to combine.
  3. Continue to cook, stirring occasionally, until the oats are fully cooked and creamy, about 5 minutes.
  4. Remove from heat and serve warm, topped with chopped nuts if desired.

Notes

  • For extra creaminess, you can use almond milk.
  • Feel free to add a scoop of protein powder for a protein boost.
