Summer pudding: The best homemade delight to beat the heat

Summer Pudding

Enjoy a refreshing summer pudding that’s easy to make and perfect for hot days.

Ingredients

  • 2 cups mixed berries (strawberries, raspberries, blueberries)
  • 1 cup sugar
  • 6 slices white bread
  • 1 cup water
  • 1 tablespoon lemon juice

Instructions

  1. In a saucepan, combine the berries, sugar, and water. Cook over medium heat until the berries release their juices.
  2. Remove from heat and stir in lemon juice.
  3. Cut the crusts off the bread and line a bowl with slices, reserving some for the top.
  4. Pour the berry mixture into the lined bowl and cover with more bread.
  5. Place a weight on top and refrigerate for at least 6 hours, or overnight.
  6. To serve, flip the pudding onto a plate and enjoy.

Notes

  • For best results, use fresh, ripe berries.
  • It’s also delicious with a dollop of whipped cream.
