Steak and Potato Soup

A rich and hearty soup that combines tender steak, creamy potatoes, and the smoky flavor of turkey bacon.

Ingredients

  • 1 pound steak, cut into bite-sized pieces
  • 4 slices turkey bacon, chopped
  • 3 cups potatoes, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 tablespoon thyme
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat and cook the turkey bacon until crispy. Remove and set aside.
  2. Add diced steak to the pot and brown on all sides.
  3. Stir in onion and garlic; sauté until softened.
  4. Add potatoes, beef broth, and thyme; bring to a boil and then simmer until potatoes are tender.
  5. Stir in cream and cooked turkey bacon; season with salt and pepper.
  6. Serve hot and enjoy!

Notes

  • For a spicier version, add red pepper flakes.
  • This soup can be frozen for up to 3 months.
