2 cups julienned carrots
1 tablespoon salt
1/4 cup vinegar
2 tablespoons sugar
2 tablespoons vegetable oil
2 cloves garlic, minced
1 tablespoon gochugaru (Korean red pepper flakes)
1 teaspoon sesame seeds
Instructions
In a large bowl, combine julienned carrots and salt. Mix well and let sit for 30 minutes.
Rinse carrots under cold water and drain.
In a separate bowl, whisk together vinegar, sugar, oil, garlic, gochugaru, and sesame seeds.
Add the carrots to the vinegar mixture and toss until evenly coated.
Transfer to a jar and refrigerate for at least 2 hours before serving.
