Spicy Korean Carrots – Morkovcha

  • 1 tablespoon salt
  • 1/4 cup vinegar
  • 2 tablespoons sugar
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon gochugaru (Korean red pepper flakes)
  • 1 teaspoon sesame seeds

Instructions

  1. In a large bowl, combine julienned carrots and salt. Mix well and let sit for 30 minutes.
  2. Rinse carrots under cold water and drain.
  3. In a separate bowl, whisk together vinegar, sugar, oil, garlic, gochugaru, and sesame seeds.
  4. Add the carrots to the vinegar mixture and toss until evenly coated.
  5. Transfer to a jar and refrigerate for at least 2 hours before serving.
