- 1 spaghetti squash
- 4 strips turkey bacon
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) crushed tomatoes
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half and scoop out the seeds.
- Place the squash cut side down on a baking sheet and roast for 30-40 minutes until tender.
- In a skillet, cook the turkey bacon until crispy, then remove and crumble.
- In the same skillet, sauté onions and garlic until translucent.
- Add crushed tomatoes, Italian seasoning, salt, and pepper; simmer for 10 minutes.
- Once the squash is cool, use a fork to scrape the flesh into strands.
- Combine the squash strands with the sauce and crumbled bacon, and serve.
Notes
- For a vegetarian version, omit the bacon and use mushrooms for added flavor.
- Store any leftovers in an airtight container in the refrigerator.
