Instructions

  1. Start by smashing the cucumbers to break them down a little.
  2. Sprinkle salt over the cucumbers and let them sit for 10 minutes to draw out excess moisture.
  3. In a small bowl, whisk together rice vinegar, sesame oil, and sugar until well combined.
  4. Drain any excess liquid from the cucumbers and toss them in the dressing.
  5. Add sliced green onions and sesame seeds; mix well.
