  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine pumpkin puree, brown sugar, granulated sugar, melted butter, egg yolk, and vanilla extract until smooth.
  3. In another bowl, mix the rolled oats, flour, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the pumpkin mixture and stir until combined.
  5. Fold in the chocolate chips.
  6. Drop tablespoons of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are golden.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
