Slow Cooker Creamy Chicken & Corn Soup

  • 1 pound boneless, skinless chicken breasts
  • 2 cups frozen corn
  • 1 cup diced onion
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 cup chopped green onions

Instructions

  1. Place the chicken, corn, onion, garlic, chicken broth, salt, pepper, and thyme in the slow cooker.
  2. Cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through.
  3. Remove the chicken and shred it with two forks.
  4. Return the shredded chicken to the slow cooker and stir in the heavy cream.
  5. Cook for an additional 30 minutes on high.
  6. Serve hot, garnished with chopped green onions.

Notes

  • For added flavor, you can sauté the onions and garlic before adding them to the slow cooker.
