Slow Cooker Beef & Quinoa Enchilada Casserole

This Slow Cooker Beef & Quinoa Enchilada Casserole is an easy and flavorful comfort food that your family will love.

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups enchilada sauce
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 bell pepper, diced
  • 1 cup shredded cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a skillet, brown the ground beef over medium heat.
  2. In the slow cooker, combine the beef, quinoa, enchilada sauce, black beans, corn, bell pepper, cumin, chili powder, salt, and pepper.
  3. Mix well and cover.
  4. Cook on low for 6-8 hours or high for 3-4 hours.
  5. Before serving, sprinkle cheese on top and let it melt.
