Slow Cooker Beef Bourguignon

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 4 slices bacon, diced
  • 1 onion, chopped
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 2 cups red wine
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • 1 bay leaf
  • 8 ounces mushrooms, sliced
  • 1 tablespoon flour
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the bacon and cook until crispy.
  2. Remove the bacon, and in the same skillet, brown the beef chuck on all sides.
  3. Add the onion, carrots, and garlic to the skillet, cooking until softened.
  4. Transfer the beef and vegetables to the slow cooker. Stir in the red wine, beef broth, tomato paste, thyme, and bay leaf.
  5. Cover and cook on low for 8 hours or until the beef is tender.
  6. Stir in the mushrooms and flour during the last 30 minutes of cooking.
  7. Season with salt and pepper to taste before serving.

Notes

  • For an even richer flavor, let the stew sit in the fridge overnight and reheat before serving.
