- 2 pounds beef chuck, cut into 1-inch pieces
- 1 tablespoon olive oil
- 4 slices bacon, diced
- 1 onion, chopped
- 2 carrots, diced
- 3 cloves garlic, minced
- 2 cups red wine
- 2 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon thyme
- 1 bay leaf
- 8 ounces mushrooms, sliced
- 1 tablespoon flour
- Salt and pepper to taste
- In a large skillet, heat olive oil over medium heat. Add the bacon and cook until crispy.
- Remove the bacon, and in the same skillet, brown the beef chuck on all sides.
- Add the onion, carrots, and garlic to the skillet, cooking until softened.
- Transfer the beef and vegetables to the slow cooker. Stir in the red wine, beef broth, tomato paste, thyme, and bay leaf.
- Cover and cook on low for 8 hours or until the beef is tender.
- Stir in the mushrooms and flour during the last 30 minutes of cooking.
- Season with salt and pepper to taste before serving.
