Slow Cooker Beef Bourguignon

A hearty and comforting dish made with tender beef, flavorful herbs, and a twist of turkey bacon, perfect for a cozy meal.

  • 2 pounds beef chuck, cut into cubes
  • 4 ounces turkey bacon, diced
  • 1 cup onions, chopped
  • 2 cups carrots, sliced
  • 3 cloves garlic, minced
  • 2 cups red wine
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a skillet, cook turkey bacon until crispy.
  2. Add beef cubes to the slow cooker along with onions, carrots, and garlic.
  3. Stir in the cooked turkey bacon, wine, beef broth, tomato paste, thyme, and bay leaf.
  4. Season with salt and black pepper.
  5. Cover and cook on low for 7-8 hours or until beef is tender.
  6. Remove bay leaf before serving.

Notes

  • For a thicker sauce, you can mix cornstarch with water and stir it in the last 30 minutes of cooking.
  • Serve with fresh crusty bread or mashed potatoes.
