  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mash the bananas and mix in grated carrots.
  3. In another bowl, whisk together oil, sugar, eggs, and vanilla.
  4. Combine wet and dry ingredients, being careful not to overmix.
