  • 1 cup Arborio rice
  • 4 cups chicken broth
  • 1 pound shrimp, peeled and deveined
  • 1 cup white wine
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a saucepan, heat the chicken broth and keep it warm.
  2. In a large skillet, heat olive oil and butter over medium heat. Add onion and garlic, sautéing until translucent.
  3. Add Arborio rice to the skillet and toast for about 2 minutes.
  4. Pour in the white wine and stir until absorbed.
  5. Gradually add warm chicken broth, one ladle at a time, stirring continuously until absorbed before adding more.
  6. After about 15-20 minutes, when rice is al dente, stir in shrimp and cook until they turn pink.
  7. Remove from heat and stir in Parmesan cheese.
  8. Season with salt and black pepper to taste.

Notes

  • For a creamier risotto, stir in a bit more butter and Parmesan at the end.
  • Adding peas can enhance both flavor and color.
