  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 cup diced carrots
  • 1 cup diced potatoes
  • 1 cup frozen peas
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the turkey bacon and cook until crispy.
  2. Remove the bacon and set aside. In the same pot, add ground turkey and cook until browned.
  3. Add onions, garlic, carrots, and potatoes, cooking until the vegetables are tender.
  4. Pour in the chicken broth and add thyme and rosemary. Bring to a boil.
  5. Add frozen peas and let the soup simmer for about 15 minutes.
  6. Serve hot, garnished with chopped turkey bacon.
